  • 8 leek's whites
  • 2 boiled eegs
  • 15 ml (1 tablespoon) of finely chopped fresh parsley
  • 160 ml (2/3 cup) of clear vinaigrette of your choice
  • Salt and pepper

  • Slice leeks in two. Wash under water then tie up. Cook Les Cultures de chez nous leeks mignons into salted water or chicken broth for about 12 minutes uncovered. Drain well with a cloth. Cool down.
  • Divide boiled eggs whites from yolk. Chop separately and mix to the vinaigrette.
  • When serving, pour over leeks. Season and garnish with parsley.
