Herbs and summery perfumed strawberries salad

  • Ingredients for the vinaigrette :
  • Few medium size strawberries
  • 30 ml (2 tablespoons) of peeled raw tomatoes
  • 30 ml (2 tablespoons) of olive oil
  • 15 ml (1 tablespoon) of balsamic vinegar
  • 22 ml (1½ tablespoon) of brown sugar
  • Ingredients for syrup :
  • 100 ml (1/2 cup) of water
  • A handful of mint leaves
  • 15 ml (1 tablespoon) of sugar
  • Pepper up to taste

  • Preparation for syrup :
  • Bring to a boil and stop heating. Pepper generously. Add mint leaves, cover and infuse until water is entirely cold. Filter everything and add sugar. Reset at medium heat and reduce until obtaining a syrup. Let cool down.
  • Vinaigrette preparation :
  • Pour all ingredients for the vinaigrette in a bowl and mix together until obtaining a smooth mixture.
  • Slice strawberries depending of their size, into slices of 2 or 3. Divide salad into plates, add few strawberries, then pour the vinaigrette and syrup. Pepper up to taste.
