Ingredients
  • 2 salmon fillets
  • 2 packages of 250 g (8 cups) of Les Cultures d chez nous sliced leeks
  • 1/2 lemon
  • Few fresh chervil branches
  • 250 ml (1 cup) of white wine
  • 150 ml (1/2 cup) of fresh cream
  • 15 ml (1 tablespoon) of flour
  • 60 ml (4 tablespoons) of butter or margarine
  • Your favorite grated cheese
  • Salt and pepper
Preparation

  • Steam cook sliced leeks for 15 to 20 minutes.
  • Meanwhile, heat white wine in a casserole. Pepper white wine and reduce lightly at high heat. Spray salmon fillets with lemon juice. Salt and set into white wine for about 3 minutes over one side and for 2 minutes over the other side. Remove and set aside at warm.
  • Melt 30 ml (2 tablespoons) of butter in a casserole . Add flour then cook for about 30 to 40 seconds.
  • Add cooked white wine to the salmon. Whisk and add cream while whisking vividly. Thicker for about 4 minutes. Stir often.
  • Preheat oven grill. Butter 2 small gratin plates. Set sliced leeks inside. Set salmon fillets and coat with sauce.
  • Gratin at broil for about 2 to 3 minutes.
