				Chicken and leek skewers with pesto and croutons
				
				
				
				
					
					
		
			Ingredients
				
					
						
- 4 chicken breasts, diced
 
- 1 leek cut into thick slices
 
- 12 basil leaves
 
- 12 small tomatoes
 
- 1 baguette, thickly sliced
 
- Store-bought pesto
 
- Salt and pepper
 
					 
				 
		 
		
			
				
					
						
							
- Preheat the oven to 370°F (190°C).
 
- Cover a baking plate with parchment paper. Brush the paper lightly with olive oil.
 
- Season chicken cubes with salt and pepper, then thread onto small skewers, alternating with basil, leeks and tomatoes. Brush with a little pesto. Place the skewers on the baking plate.
 
- Brush baguette slices with pesto and place them around skewers. Bake in the oven for about 35 minutes, turning the brochettes as they cook.
