Potatoes peels gratin with bacon

No one could resist to this recipe! These crispy and tasty peels make a perfect accompaniment for main dishes. For an healthier version, replace regular bacon with trukey bacon and the regular cheese witth a light cheese with 18% of fats.

Ingredients

  • Peels of 5 potatoes (aproximatively 21/2 pounds)
  • 8 cooked bacon slices (healthier version : turkey bacon)
  • 2/3 cup of grated mid-strenght cheddar (healthier version : light cheese with 18 % fats)
  • 3 tablespoons of melted garlic butter
  • 3 tablespoons of chives
  • Paprika or Cayenne pepper

Preparations

  1. Preheat oven at 176 oC (350 oF).
  2. Cook potatoes for 60 minutes or till it became tender.
  3. Remove from the oven the potatoes and let it cool down for an hour.
  4. Slice the potatoes in half in lenght and scoop out almsot entirely (letting a bit of meat ofr it to stand well).
  5. Preheat oven at 232 oC (450 oF).
  6. On an oven safe plate, lay peels near to each other.
  7. Add butter, bacon, chives and cheese, and sprinkle a bit of Cayenne pepper or paprika.
  8. Bake in the middle of the oven for 15 to 18 minutes or till potatoes peels gets colored and crispy.
  9. Enjoy!

  3. Cut in slice.
  4. Boil peels and drown in cold water. Re-do 3 times.
  5. Simmer in sirop for 15 to 20 minutes.
  6. Place peels on a plate and sprinkle with sugar (up to your choice).

Ingredients

  • 3 bananas peels
  • 2 eggs
  • 1 cup of sugar
  • 1 1/2 cup of flour
  • 1/4 cup of butter
  • 3 1/2 cups of water
  • 1 teaspoon of yeast

Preparation

  1. Preheat oven at 220 °C (430 oF).
  2. Divide egg white from egg yolk.
  3. Whip egg white till it gets foamy. Put aside.
  4. Well wash bananas peels and reduce in puree with water in a mixer. 
  5. In a large bowl, add egg yolk, butter and sugar. Mix well.
  6. Add in the same bowl flour, yeast and bananas puree. Mix well.
  7. Incorporate slowly egg white.
  8. Pour the preparation in a cake .
  9. Oven bake for 20 to 30 minutes.
  10. Enjoy!
