For the sponge cake :
250 ml (1 cup) of flour
5 ml (1 teaspoon) of baking powder
3 eggs
250 ml (1 cup) of sugar
45 ml (3 tablespoons) of cold water
For the garnishing :
180 ml (¾ cup) of 35% whipping cream
750 ml (3 cups) of fruits of your choice
125 ml (½ cup) of apricots jelly or melted gooseberries

Preparation
Preheat oven at 205 C (400 F).
In a bowl, mix flour with baking powder.
With an electric mixer, whisk eggs until it whitens. Gradually add sugar, then water.
Carefully add dry ingredients to liquid ingredients.
Butter and flour a flan mold of 30 cm (12 inches) of diameter. Pour batter into the mold.
Oven bake 12 minutes. Remove from oven and unmold. Cool down entirely before garnishing.
With an electric mixer, whip the cream.
Set fruits over cooled cake. Coat with melted jelly and garnish with whipped cream.
