Ingredients

  • Dough ingredients :
  • 500 ml (2 cups) of flour
  • 2 ml (1/2 teaspoon) of salt
  • 45 ml (3 tablespoons) of baking powder
  • 90 ml (6 tablespoons) of fat
  • 190 ml (3/4 cup) of milk
  • 60 ml (4 tablespoons) of sugar
  • Tapioca up to taste
  • 190 ml (3/4 cup) of bluebrries
  • Syrup ingredients :
  • 500 ml (2 cups) of boiling water
  • 375 ml (1½ cup) of sugar

Preparation

  • Syrup preparation :
  • Dissolve sugar into water. Pour in a 9 inches baking safe plate.
  • Dough preparation :
  • Preheat oven at 350 ºF (180 ºC). Sieve together flour, salt and baking powder. Mix fat with dry ingredients by alternating with milk. Roll dough into a rectangle of 10 inches X 20 inches (25 cm X 50 cm) about 1/2 inch (1,1 cm) thick.
  • Spread with blueberries. Sprinkle sugar and uncooked tapioca. Make a roll by starting by the smallest side. Slice roll into 9 slices and set down slices into syrup.
  • Oven bake 40 minutes at 350 ºF (180 ºC).
