  • 6 to 8 medium leeks
  • 500 ml (2 cups) of 15% cooking cream
  • 375 ml (1 1/2 cup) of parmesan, grated
  • Salt and pepper

  • Preheat oven to 425°F (220°C).
  • Cut off the green part of the leeks. Cut the remaining parts of the leeks into 1 1/2 inch sections (about 4 cm).
  • Set the leeks in an oven-proof dish of 9 x 13 inches (23 cm x 33 cm). It is important to pack the leek sections in the dish tightly.
  • In a small bowl, mix the cooking cream and the parmesan. Season with salt and pepper.
  • Pour the cream mixture over the leeks. Cover the dish with aluminum foil and bake for around 1 hour. Remove the aluminum foil and grill for about 10 minutes.
