4 wheat tortillas
1 package of sliced leeks
1 chopped garlic clove
2 cups of sliced mushrooms
Leafs of a fresh thyme branch
½ cups of chopped parsley
3 tablespoons of olive oil
2 tablespoons of Dijon's mustard
1 cup of arugula salad
1 cup of cottage cheese
½ cup of fresh basil
Salt and pepper

Preparation
Preheat oven at 400°F.
In a pan at medium-high heats, broil leeks, garlic and mushrooms with 1 tablespoon of olive oil until browns, for about 5 minutes. Add thyme and parsley then salt and pepper. Set aside.
Set tortillas in a oven bake safe plate covered with aluminium paper. Spread olive oil and Dijon's mustard. Set half the arugula salad, add leeks and mushrooms then mix with cottage cheese.
Oven bake for 10 to 12 minutes. Add remainings of arugula salad and basil then serve.
