  • 250 ml (1 cup) of sugar
  • 125 ml (1/2 cup) of butter
  • 2 eggs
  • 125 ml (1/2 cup) of orange juice
  • 500 ml (2 cups) of blueberries
  • 500 ml (2 cups) of flour
  • 10 ml (2 teaspoons) of baking powder
  • 5 ml (1 teaspoon) of salt
  • 5 ml (1 teaspoon) of vanilla
  • 125 ml (1/2 cup) of brown sugar

Preparation

  • Mix flour, baking powder and salt together. In another bowl, mix sugar with butter. Add eggs to sugar, one by one, while scrambling well. Finally, add vanilla.
  • Add flour mixture and alternate with orange juice, start and end with dry ingredients. Mix carefully blueberries.
  • Set in a tubular mold. Spread brown sugar over cake. Oven bake for 30 minutes at 350 °F (180 °C). It could be possible the baking last up to 50 minutes.
