Ingredients
1 large onion
1½ package of 250 gr (4½ cups) of Les Cultures de chez nous sliced leeks
200 ml (0,8 cup) of white cheese
2 eggs
30 ml (2 tablespoons) of breadcrumbs
1 shortcrust
45 ml (3 tablespoons) of olive oil
Pepper and salt (nutmeg)

Surprise leeks pie

Preparation
Slice onion into thin strips. In a pan, melt at low heat with olive oil. Meanwhile, add sliced leeks to the melted onion. pepper, salt and simmer covered for about 20 to 30 minutes.
Preheat oven at 400°F (200°C). Whisk eggs in a bowl. Add white cheese and breadcrumbs. Mix the preparation. Unroll shortcrust in a pie pan. Prick the bottom of the crust with a fork.
Spread sliced leeks and onions at the bottom of the crust.
Afterward, pour the white cheese preparation over the pie (you may also sprinkle few parmesan cheese over the pie).
Oven bake 15 minutes until the pie browns.
Cool down a bit before unmolding.
