Surprise leeks pie

  • 1 large onion
  • 1½ package of 250 gr (4½ cups) of Les Cultures de chez nous sliced leeks
  • 200 ml (0,8 cup) of white cheese
  • 2 eggs
  • 30 ml (2 tablespoons) of breadcrumbs
  • 1 shortcrust
  • 45 ml (3 tablespoons) of olive oil
  • Pepper and salt (nutmeg)

  • Slice onion into thin strips. In a pan, melt at low heat with olive oil. Meanwhile, add sliced leeks to the melted onion. pepper, salt and simmer covered for about 20 to 30 minutes.
  • Preheat oven at 400°F (200°C). Whisk eggs in a bowl. Add white cheese and breadcrumbs. Mix the preparation. Unroll shortcrust in a pie pan. Prick the bottom of the crust with a fork.
  • Spread sliced leeks and onions at the bottom of the crust.
  • Afterward, pour the white cheese preparation over the pie (you may also sprinkle few parmesan cheese over the pie).
  • Oven bake 15 minutes until the pie browns.
  • Cool down a bit before unmolding.
