Ham and leeks squash sauté

  • 30 ml (2 tablespoons) of olive oil
  • 1 package of 250 gr (3 cups) of Les Cultures de chez nous sliced leeks
  • 1 peeled and diced squash
  • 3 chopped garlic cloves
  • 15 ml (1 teaspoon) of chopped fresh ginger
  • 125 ml (1/2 cup) of chicken broth
  • 250 ml (1 cup) of diced ham
  • Salt and pepper up to taste

  • In a large pan, fry leeks, squash and garlic for 3 minutes. Add ginger, chicken broth and continue cooking until broth reduces.
  • Add ham. Season up to taste.

Delicious in this sauté version, may also cook leftovers into an omelette or a quiche.
