250 g of dark chocolate 70 %
6 egg yolks
60 ml (¼ cup) of sugar
375 ml (1 ½ cup) of 35% whipping cream
375 ml (1 ½ cup) of diced strawberries
30 ml (2 tablespoons) of honey

Preparation
With a bain-marie, melt chocolate. Remove from heat and cool down.
In a bowl, whisk egg yolks with sugar until the mix whitens.
Gradually add melted chocolate to the mix of egg yolks.
With an electric mixer, whip cream at high speed until obtaining firm spikes.
Add whipped cream to the previous mix by carefully folding the preparation with a spatula.
Add 250 ml (1 cup) of diced strawberries by carefully stirring.
Divide the mousse into four desserts cups.
Refrigerate for 2 to 3 hours.
In an hermetical container, mix remaining strawberries with honey. Set aside at fresh.
When serving, garnish each mousses with strawberries salsa.
