8 tartlet undercrusts (2 inches)
2 package of 250 gr (6 cups) of Les Cultures de chez nous sliced leeks
30 ml (2 tablespoons) of butter
Salt and pepper up to taste
100 ml (1/2 cup) of cooking cream
2 egg yolks
1 pinch (1/4 teaspoon) of nutmeg
200 gr (1 1/2 cup) of grated Cheddar cheese

Preparation
Boil Les Cultures de chez nous sliced leeks for 5 minutes and drain. Melt butter in a casserole. Add leeks then salt and pepper. Stir, lower heat and cover. Steam slowly for 10 minutes.
Remove lid, stir and cook for 5 minutes to evaporate part of liquid. Mix cream, egg yolks, nutmeg nd Cheddar cheese. Add to leeks compote and garnish tartlets undercrust.
Spread with Cheddar each tartlets and bake at 350 °F (180 °C) for 25 to 30 minutes.
Serve warm.
