1 big potato
1 medium onion
2 Cortland apples
20 ml (4 teaspoons) of olive oil
1 package of 250 g (3 cups) of Les Cultures de chez nous sliced leeks
1,25 L (5 cups) of chicken broth without added salt
1 Bay leaf
1 thyme stem
Salt and peper up to taste

Preparation
Peel and dice potato and apples. Chop onion.
In a casserole, heat oil at medium heat. Cook onion, potato, apples and sliced leeks 5 minutes, without browning.
Add broth, Bay leaf and thyme stem. Bring to a boil. Cover and let simmer 35 minutes, until vegetabes tenders.
Remove Bay leaf and thyme stem. With a mixer, reduce the preparation into a smooth cream.
