Leeks soup with pears

  • 4 big potatoes
  • 3 pears
  • 45 ml (3 tablespoons) of butter
  • 2 packages of 250 gr (6 cups) of Les Cultures de chez nous sliced leeks
  • 2 liters (8 cups) of chicken or vegetables broth
  • Salt and pepper up to taste

  • Peel potatoes and pears, then slice into cubes. Set in a container filled with cold water and set aside.
  • In a casserole, melt butter at medium heat. Brown leeks for 4 to 5 minutes, without browning completely.
  • Drain potatoes and pears.
  • Add potatoes, pears, chicken or vegetables broth and seasonings. Bring to a boil. Simmer uncovered for 20 to 25 minutes at medium heat.
  • Set in the mixer . Mix till homogenization.
