  • 100 g of raw cashew nuts
  • 100 ml of water
  • Water for saoking

  • In container with an hermetical lid, soak raw cashew nuts in enough water to cover all nuts. Refrigerate at least 4 hours. Rinse nuts and set into the mixer's bowl. Add 100 ml of water and turn on the mixer till the mixture of nuts and water gets smooth, creamy and homogenized.

Chef's notes

It can be use for desserts or main dishes instead of dairy products. It's a basic preparation frequently used in vegetarian cooking.
