Leeks and white wine fondu broth

  • ½ leek
  • 1 onion
  • 1 carrot
  • 2 garlic cloves
  • 15 ml (1 tablespoon) of marinade spices
  • 10 ml (2 teaspoon) of fresh chopped rosemary
  • 500 ml (2 cups) of white wine
  • 1,25 liter (5 cups) of chicken broth of fish fumet

  • Mince leek, onion, carrot and garlic.
  • In a casserole, heat oil at medium heat. Roast minced vegetables with spices and rosemary for 2 minutes.
  • Pour white wine and broth. Bring to a boil. Cover and simmer at low heat for 20 minutes.
  • Filter borht if desired. When it's time to eat, pour warm broth into the bowl.
