Bib of beef with leeks, lemon, honey and mustard

  • 1 kg (2,2 pounds) of bib of beef
  • 1/2 package of 250 gr (1½ cup) of Les Cultures de Chez Nous sliced leeks
  • 1 envelope of demi-glace sauce (prepare as indicated over the package)
  • Juice of 2 lemons
  • 30 ml (2 tablespoons) of honey
  • 30 ml (2 tablespoons) of butter
  • 30 ml (2 tablespoon) of Dijon mustard

  • Brown leeks in butter in a nonstick pan at medium heat for some minutes.
  • Add honey and lemon juice, mix well and cook for 1 more minute.
  • Pour preparation of demi-glace sauce and mustard. Mix well to get a smooth and homogenized texture. reduce till desired consistency.
  • Cook bib of beef with a bit of oil for 2 to 3 minutes each side on high heat. Salt and pepper.
  • Serve with leeks, lemon, honey and mustard sauce. A true delight!
