Ingredients

  • 60 ml (1/4 cup) of butter
  • 1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks
  • 4 eggs
  • 500 ml (2 cups) of flour
  • 325 ml (1 1/3 cup) of milk
  • 2,5 ml (1/2 teaspoon) of nutmeg
  • A pinch of espelette pepper
  • 110 gr of Blue, Cambozola or strong Cheddar cheese
  • 1 pinch of salt
  • 15 ml (1 tablespoon) of fresh parsley
  • 50 gr of pine nuts
  • 15 ml (3 teaspoons) of baking powder

Preparation

  • Rinse parsley under cold water, drain. Dice cheese. Melt butter in a casserole, add leeks and cook at medium heat for 10 minutes and verify cooking with your taste.
  • In a large bowl, set flour then add milk and eggs to the mixture. Continue to mix until homogenization. Add nutmeg, espelette pepper and cheese. Then add leeks, salt, parsley and pine nuts and mix with a spatula. Spread baking powder and mix while lightly lifting the paste. Pour in a buttered bread mold.
  • Set bread in oven for 1 hour. Verify cooking by sticking a knife at bread center, it needs to get out clean. Cool down 5 minutes and unmold bread, can serve it hot with sauce of your choice or as an appetizer, sliced.
