Sometimes, we want to indulge in our guilty pleasures, but not too much. Vegan desserts are perfect for this: they're often more nutritious than their alter egos and just as delicious and usually straightforward to make.

Plus, what better way to get your family to eat tofu than to hide it in a dessert? A meatless burger, and the kids immediately ask: where’s my hamburger? But if you give them a dessert, they’ll never ask!

A vegan chocolate cake (with zucchini 🤫)

Ahhhhh, zucchini. What a delight!

Did you know that it’s even better grated into a dessert? Yes, zucchini can be ground very finely and wrung out to create an almost tasteless fibre that’s a good substitute for butter in almost any cake.

The result is a creamy texture and a delectable chocolate cake with much lower calories.

Here’s our favourite vegan recipe:

1. Mix the following ingredients and allow to thicken for a few minutes:

  • ✔️2 tbsp. chia
  • ✔️6 tbsp. hot water

 2. Meanwhile, mix the following ingredients in a separate bowl:

  • ✔️2 1/2 cups flour
  • ✔️1/4 cup cocoa powder
  • ✔️2 tsp. baking powder
  • ✔️1 tsp. baking soda

3. Then mix the following ingredients with a hand mixer:

  • ✔️Your chia seed preparation
  • ✔️1 cup margarine
  • ✔️1/4 cup soy milk
  • ✔️1 small jar of applesauce (113 g)
  • ✔️1 tsp. vanilla extract

4. Add the dry ingredients and blend again.
5. Add the next ingredient and stir with a large spoon:

  • ✔️3 cups grated zucchini

6. Place in a pan greased with vegetable oil or margarine and bake at 350 °F (177 °C) for 50 minutes.

An excellent little gelatin-free jello

Do you know what gelatin is? If you don’t, you probably don’t want to! The good news is that it’s super-easy to replace with agar-agar, which is a seaweed with the same gelling properties.

Using it to make homemade jello is super simple:

1. Mix the following ingredients:

  • ✔️1 1/2 tsp. agar-agar flakes (3/4 tsp. if using powdered)
  • ✔️1 cup water
  • ✔️1/4 cup sugar
  • ✔️1 cup juice of your choice

2. Bring to the boil and boil for 2 minutes.
3. Pour into small bowls and leave to set in the fridge.

An eggless angel food cake? Yes, it can!

Incredible, but true 😜. Moreover, this recipe contains no fats since it uses aquafaba, which is just a fancy name for chickpea water (yes, the one from the cane you throw down the sink).

Here's the recipe:

  • ✔️1/2 cup aquafaba (the liquid from a can of chickpeas)
  • ✔️1 cup sugar
  • ✔️1/8 tsp. salt
  • ✔️1 cup flour, sifted
  • ✔️1/2 tsp. vanilla extract
  • ✔️1/2 tsp. orange extract
  • ✔️1 1/2 tsp. cream of Tartar

1. Whip the chickpea liquid with a hand mixer for about 4 minutes or until soft peaks form.

2. Add cream of Tartar, sugar and extracts to mixture. Beat until stiff peaks form.

3. Gently fold in the flour until the mixture is smooth.

4. Pour the mixture into an ungreased baking tin.

5. Bake at 350 °F (177 °C) for 20-25 minutes.

6. Garnish with fruit or vegan whipped cream (we have a recipe for that, too 😉 ).

Express whipped cream without cream to go with it

Desserts are great with whipped cream, but would you believe us if we told you that whipped cream without cream is possible? This rich, not-whipped-cream keeps well in the fridge.

Here’s the recipe:

  • ✔️ 1/2 cup aquafaba (the liquid from a can of chickpeas)
  • ✔️ 1/8 tsp. cream of Tartar
  • ✔️ 3/4 cup powdered sugar
  • ✔️ 1 tsp vanilla extract

1. Add the cream of Tartar to the aquafaba and blend on medium speed with a hand mixer until frothy.

2. Increase speed to maximum and beat for another 3-4 minutes until stiff peaks form.

3. Add powdered sugar and vanilla and beat for another minute until the desired consistency is reached.
