Leeks tatin with maple syrup

  • Ingredients for 6 tatins :
  • 2½ packages 250 g (7½ cups) of Les Cultures de Chez nous sliced leeks
  • 1/2 package of goat cheese or any samely type of cheese
  • 30 ml (2 tablespoons) of maple syrup (may be replaced by honey)
  • 1 egg
  • 150 ml (5/8 cup) of fresh cooking cream
  • 20 ml (20 g) of grated Gruyère cheese
  • 1 puff pastry
  • 10 ml (2 teaspoons) of butter
  • Salt and pepper

  • Roast Les Cultures de Chez nous sliced leeks for 20 minutes in a buttered pan. Salt and pepper. Add 2 tablespoons of maple syrup. Set sliced leeks into silicone molds. Cover with a slice of goat cheese over it.
  • Mix egg, Gruyère grated cheese and cream. Pour 2 to 3 tablespoons of preparation into molds.
  • With a glass, cut 6 cercles of puff pastry of the same diameter as the molds, set over the preparation and look out to join everything all together well.
  • Set in the oven for 20 to 25 minutes at 400 °F (200 ºC). Enjoy !
