Ingredients

  • 2 large leeks
  • 1 small green pepper
  • 1 small red pepper
  • 1 small orange pepper
  • 2 green shallots
  • 250 ml (1 cup) of diced Feta cheese
  • 20 ml of lemon juice
  • 60 ml (1/4 cup) of sunflower oil
  • 3/4 cup of finely chopped fresh parsley
  • Salt, pepper and greek salad spices, up to taste

Preparation

Side-by-side mode
  • Slice leeks into 4 over its lenght and clean well. Slice over the width, into pieces of 8 cm. Set leeks pieces in a casserole with a bit of water. Bring to a boil and cook 7 minutes.
  • Meanwhile, slice peppers into large dice. Once the 7 minutes of leeks cooking finished, add diced peppers and continue cooking 3 minutes. Drain well leeks and peppers and then set in a large bowl with finely chopped green shallots, feta cheese, lemon, oil, parsley and spices up to your taste. Mix well and cool down in the refrigerator for a few hours.
