2 leek whites, cut into small chunks
125 ml (1/2 cup) of cooking cream
125 ml (1/2 cup) of spicy mayonnaise
15 ml (1 tablespoon) of tamari sauce
250 ml (1 cup) of arugula
1 pear, cut into small cubes
250 ml (1 cup) of northern shrimp
500 ml (2 cups) of cooked sushi rice
30 ml (2 tablespoons) of coconut flakes
2 nori leaves
2 pinches of salt flower

Preparation
Preheat oven to 350°F (180°C).
Place leeks, coconut, cream and salt in an ovenproof dish. Bake for 30 minutes.
In a bowl, mix leeks, cream, shrimp, arugula and pear.
Set up your sushi.
Place your mixture in the center of the rice, roll it up and gently cut.
In a small bowl, mix the mayonnaise and the tamari sauce.
Serve and enjoy with the tamari mayonnaise!
