Leeks and apples quiches, healthy version

Ingredients

  • 15 ml (1 tablespoon) of Dijon's mustard
  • 1 package of 250 g (4 cups) of Les Cultures de chez nous sliced leeks
  • 1 peeled and diced Cortland apple
  • 6 whisked eggs
  • 80 ml (1/3 cup) of chopped walnuts
  • 125 ml (1/2 cup) of 2% partly skimmed milk
  • 125 ml (1/2 cup) of grated Emmenthal cheese
  • 125 ml (1/2 cup0 of grated Mozzarella cheese
  • A pinch of ground nutmeg
  • Pepper up to taste

Preparation

Side-by-side mode
  • Preheat oven at 350ºF (180ºC).
  • In a non-stick pan, brown walnuts. Set into a small bowl and set aside. Brown leeks few minutes at medium heat.
  • In a large bowl, whisk eggs, milk, cheeses and seasonings. Add apple cubes, nuts and leeks.
  • Pour mixture in a quich mold.
  • Oven bake 40 to 50 minutes or until quich center puff lightly and its top well browned.

Chef’s note

Quiches are great nutritious and sustaining plates when we set aside crust and bacons. These ingredients are rich with saturated fats and salt without leading us up to satiety. With this healthy version of the leeks and apples quiche, we used nuts and cheese to make a contrast with apple flavor. An intereting mix which gaves good fats, fibers, proteins, vitamins and minerals.
