Ingredients
  • 15 ml (1 tablespoon) of canola oil
  • 4 skinless chicken breasts
  • For the sauce :
  • 125 ml (1/2 cup) of red wine
  • 180 ml (¾ cup) of water
  • 1 package of juice sauce (like Knorr) of 26 g
  • 60 ml (1/4 cup) of maple syrup
  • 5 ml (1 teaspoon) of fresh chopped rosemary (optional)
  • 125 ml (1/2 cup) of fresh blueberries
Preparation

  • In a casserole, pour wine and water. Add the contents of the juice sauce package while whisking. Continue whisking until obtaining an homogeneous consistency. Always while whisking, bring to a boil then remove from heat.
  • In a pan, heat oil at medium heat. Roast breasts 1 minute over each sides.
  • Add wine sauce and rosemary. Clear the bottom of the pan with a wooden spoon to remove all cooking juice. Cover and simmer 10 minutes at medium-low heat. Add blueberries and continue cooking 2 minutes.
