1 pork fillet of 600 g (about 1 1/3 pound)
30 ml (2 tablespoons) of old style mustard
Salt and pepper up to taste
15 ml (1 tablespoon) of canola oil
3 peeled, pitted, and sliced into quarters Cortland apples
3 leeks slice into rings of 5 cm (2 inch)
45 ml (3 tablespoons) of maple syrup
180 ml (3/4 cup) of chicken broth without added salt

Preparation
Preheat oven at 180 °C (350 °F).
Brush pork fillet with old style mustard and salt and pepper seasoning.
In an oven safe pan, heat oil at high heat. Brown each sides of the fillet, until it goldens. Set aside in a plate.
In the same pan, brown apples and leeks for 2 minutes a medium heat while stirring once in a while.
Pour maple syrup and chicken broth. Let simmer 5 minutes.
Set again pork filler in the pan and rolls to cover well with the preparation.
Continue oven bake for 15 to 20 minutes, depending on its thickness, until a baking thermometer set in the middle of the fillet indicates 68 °C (155 °F). Stir leeks mixture at mid-cooking.
Remove pan from oven. Slice meat and serves with apples and leeks.
