Ingredients

  • 400 g (14 oz) of boneless chicken, without skin, cut into cubes
  • Flour
  • 60 ml (1/4 cup) of olive oil
  • Salt and pepper up to taste
  • 1 package (3 cups) of Les Cultures de chez nous sliced leeks
  • 4 chopped garlic cloves
  • 1 diced red pepper
  • 1 diced green pepper
  • 4 diced potatoes
  • 250 ml (1 cup) of small cauliflower bouquets
  • 30 ml (2 tablespoons) of herbs of Provence
  • Lemon zest and juice
  • 500 ml (2 cups) of chicken broth

Preparation

  • Cover chicken cubes with flour. Preheat a medium high heat a large cocotte with olive oil. Season chicken and brown each side for 1 to 2 minutes.
  • Add remainings ingredients and reduce at low heat. Simmer for 50 to 60 minutes.
