Cod au gratin with leeks fondue

  • 500 ml (1 pound) of cod
  • 2 package of 250 gr (6 cups) of Les Cultures de chez nous sliced leeks
  • 1 onion
  • 150 ml (10 tablespoons) of fresh cream
  • A bit of grated Gruyère cheese
  • 15 ml (1 tablespoon) of olive oil
  • 15 ml (1 tablespoon) of flour
  • Salt and pepper

  • Desalinate cod.
  • Mince onion an set with Les Cultures de chez nous sliced leeks in a pan with a tablespoon of warm olive oil. While leeks cook, also cook cod.
  • drain cod, crumble and pepper. If needed, add salt.
  • Add a tablespoon of flour over leeks fondue. Salt, pepper and mix. Add 150 ml (1/2 cup) of fresh cream.
  • Grease a gratin plate or individual small cocottes. Set leeks fondue, cod and an ultimate layer of leeks fondue.
  • Spread with gruyère cheese and oven bake 15 minutes.
