3 eggs
2 X 250 ml (2 X 250 gr) package of mascarpone cheese
80 ml (80 gr) of icing sugar (a little sweet, since cookies already are sweet)
2 large packages of ladyfingers
1 package of frozen raspberries (or fresh raspberries)
60 ml (4 tablespoons) of amaretto Rum (optional if you doesn't want any alcohol)
Strawberries marmalade (unsweetened)
For decoration : raspberries chocolate milk tablets (4 large squares would be enough)

Preparation
Divide whites from egg yolks into two large different bowls.
Whisk egg yolks with 25 ml (25 gr) of sugar until the mixture gets white.
Add mascarpone cheese and mix well to smooth the mixture.
Whisk egg whites. Add a pinch of salt and sugar. Whisk again to make the whites firm. With the help of a spatula, add carefully to the mixture of yolk and mascarpone.
Set ladyfingers at the bottom of your presentation plate, after quickly soaking them up with rum and strawberries marmalade.
Pour half of this cream over the ladyfingers.
Set again a layer of ladyfinger after once again soaking it up with rum.
Pour the other half of the cream over the cookies.
Set aside the plate in the refrigerator all night (coreved with plastic film).
When serving (to avoid shavings being diluted), decorates with chocolate shavings (with the help of a blade peeler), fresh raspberries or with pistachio granita.
