				Focaccia with tomatoes, red onion, cheese and herbs
				
				
				
				
					
					
		
			Ingredients
				
					
						
- 454 g (1 lb) of pizza dough
- 15 ml (1 tablespoon) of Italian seasonings
- 5 ml (1 teaspoon) of fennel seeds
- Salt and pepper, up to taste
- 30 ml (2 tablespoons) of olive oil
- 250 ml (1 cup) of grated Mozzarella
- 2 Italian tomatoes, minced
- 1 red onion, finely sliced into rings
- 15 ml (1 tablespoon) of thyme, chopped
- 15 ml (1 tablespoon) of oregano, chopped
- 1 garlic clove, chopped
- 75 ml (1/3 cup) of grated Parmesan
 
				 
		 
		
			
				
					
						
							
- Preheat oven to 400°F (200°C).
- In a bowl, mix pizza dough with Italian seasonings and fennel seeds. Salt and pepper.
- Shape the dough into a 20 cm (8 inches) square over a floured work surface. Lay the dough on oiled cooking sheets. Brush the surface with olive oil.
- Garnish dough with Mozzarella, tomatoes, red onion, herbs, garlic and Parmesan.
- Oven-bake for 15 to 20 minutes. Remove from oven and let cool down before slicing.
