Blueberries crepe

  • 375 ml (1 1/2 cup) of all-purpose flour
  • 30 ml (2 tablespoons) of sugar
  • 15 ml (1 tablespoon) of baking powder
  • 2,5 ml (1/2 teaspoon) of salt
  • 1 egg
  • 440 ml (1 3/4 cup) of milk
  • 30 ml (2 tablespoons) of vegetable oil
  • 100 ml (1/2 cup) of crushed Bran Flakes cereals
  • 375 ml (1 1/2 cup) of fresh or frozen blueberries (thawed)

  • In a bowl, mix flour, sugar, baking powder and salt. Set aside.
  • In another bowl, whisk eggs until foamy. Add to the egg, milk, vegetable oil and crushed cereals while stirring. Rest for 5 minutes. Mix again.
  • Add flour mixture and blueberries then stir until everything homogenize. Measure 75 ml (1/3 cup) of dough for each crepe and pour in a hot fry pan lightly greased.
  • Cook until bubbles forms at the surface and when the under is well browned. Serves right away with syrup.
