Leeks compote canapés

  • 2 tablespoons (30 ml) of butter
  • 2 sliced leeks (3 cups)
  • 1 cup (250 ml) of cooking cream
  • 5 ounces (150 gr) of Cantonnier or Parmesan cheese
  • Salt and pepper
  • 12 thin baguette bread slices, buttered

  • Brown sliced leeks in butter for about 5 minutes. Add cooking cream and Cantonnier cheese to sliced leeks.
  • Simmer at low heat for 15 to 20 minutes. Salt and pepper up to taste.
  • Meanwhile, broil bread slices in the oven over a baking sheet. Spread leeks preparation over toasted bread slices.
