Roast asparagus and peppers salad

  • 2 finely sliced red peppers
  • 1 red onion sliced in halfs and finely chopped
  • 1/4 cup (50 ml) of balsamic vinegar
  • 24 young asparagus sliced in halfs
  • 1/2 cup (125 ml) of crumbled Feta cheese
  • 1 cup (250 ml) of broccoli sprouts

  • Preheat grill at medium heat. In a medium shaped bowl, mix well onion, peppers and vinaigrette, then marinate for about 10 minutes.
  • Perforate few slit into a disposable plate. Set vegetables mixture over the plate and roast 5 minutes, while turning around the vegetables a few times. Add asparagus and roast for 5 to 10 minutes, or until it gets tender and crispy.
  • Set vegetables into four plates and add cheese and broccoli sprouts.
