  • 30 ml (2 tablespoons) of olive oil
  • 1 package of 250 gr (3 cups) of Les Cultures de chez nous sliced leeks
  • 1 liter (4 cups) of chicken broth
  • 2 large potatoes, peeled and sliced roughly
  • 3 peeled pears, seeded and sliced into four
  • 250 ml (1 cup) of milk
  • Tarragon

  • Heat oil in a casserole at medium heat. Fry sliced leeks until it becomes translucent.
  • Add the chicken broth, potatoes and pears. Salt and pepper. Bring to a boil then simmer for about 15 minutes or until the potatoes are tender.
  • Reduce into puree in a blender.
  • Pour into the saucepan and add the milk. Reheat and serve.
  • Garnish with tarragon or a few diced pear.
