Leeks and maple baked beans

  • 1 package of white beans
  • 1/2 package of 250 gr (1 1/2 cup) of Les Cultures de chez nous sliced leeks
  • 1 dark beer (341 ml)
  • 8 chopped bacon slices
  • 125 ml (4 oz) of maple syrup
  • 65 ml (2 oz) of treacle
  • 125 ml (1/2 cup) of ketchup
  • 30 ml (2 tablespoons) of dry mustard
  • 15 ml (1 tablespoon) of Dijon's mustard
  • Salt and pepper

  • Wash beans. Soak all night into cold water. Wash. Add 5 cups of cold water, cover, bring to a boil, simmer for 15 minutes. (Keep cooking's water and set aside.)
  • At the bottom of an oven safe cocotte, set slices of chopped bacon and Les Cultures de chez nous sliced leeks. Mix together other ingredients and beans. Mix carefully to combines all ingredients.
  • Cover and bake at low heat 300°F (150 °C) for about 6 hours. (verify that beans don't lack cooking's water or add if it happens)
  • Remove cover for 30 more minutes to roast beans.
