30 ml (2 tablespoons) of butter
1 package of 250 g (3 cups) of Les Cultures de chez nous sliced leeks
160 ml (2/3 cup) of cooking cream
Salt up to taste
12 thin slices of buttered baguette bread
12 thin slices of Oka cheese, slightly thinner than baguette slices
Crushed pepper up to taste

Preparation
Preheat oven at 375°F (190°C).
Heat butter in a large nonadhesive pan at medium heat. Cook in it Les Cultures de chez nous sliced leeks for 6 to 7 minutes while stirring.
Reduce heat at medium-low and cook until leek has returned its water. Stir from time to time. Do not brown. Add cream and reduce until it thicker. Salt.
Meanwhile, broill bread slices in the oven on a baking sheet. Then divide leeks preparation over grilled breads. Add a cheese slice. Spread lightly with crushed pepper.
Oven bake 15 minutes or until cheese lightly gratin.
