Rutabaga creamy soup with maple syrup

  • 1 minced leek's white
  • 1 diced rutabaga
  • 1 liter (4 cups) of chicken broth
  • 80 ml (1/3 cup) of maple syrup
  • 125 ml (½ cup) of 15% cooking cream
  • 30 ml (2 tablespoons) of olive oil
  • 80 ml (1/3 cup) of minced dried shallots

  • In a casserole, heat oil at medium heat. Roast leeks, shallots and rutabaga 2 minutes.
  • Pour broth and maple syrup. Bring to a boil. Cover and simmer 20 to 25 minutes at medium heat, until rutabaga is cooked.
  • Set the preparation in a mixer. Mix until obtaining an homogeneous preparation.
  • Set back in a casserole and add cream. Heat for 1 to 2 minutes. Salt and pepper.
