  • 1 garlic bulb (slice a large whole garlic clove in halfs with its peel)
  • 1 red onion
  • 3 liters (12 cups) of beef broth

  • Set green leek parts, garlic bulb and red onion in a cauldron.
  • Steam for 10 minutes at medium heat covered.
  • Add 3 liters (12 cups) of beef broth. Simmer for 1 hour at medium heat then filter. Keep broth.
