Ingredients

  • 30 ml (2 tablespoons) of olive oil
  • 5 ml (1 teaspoon) of cajun spices
  • 15 ml (1 tablespoon) of chopped basil
  • 250 ml (1 cup) of cooked and minced chicken
  • 15 ml (1 tablespoon) of canola oil
  • 2 minced red onions
  • 45 ml (3 tablespoons) of sugar
  • 2 lemons
  • 125 ml (1/2 cup) of water
  • 250 gr (1/2 pound) of pizza dough
  • 6 asparagus
  • 1/2 minced red pepper
  • 125 ml (1/2 cup) of grated mozzarella cheese

Preparation

  • In a bowl, mix olive oil, spices and basil.
  • Add cooked chicken pieces and marinate at fresh for 30 minutes.
  • In a casserole, pour canola oil and cook onions until well browned.
  • Add sugar, lemons juice and water.
  • Simmer at low heat until complete reduction of liquid. Set aside.
  • Preheat oven at 205 ºC (400 ºF). Lay down the dough and set over and pizza plate. Coat with sauce.
  • Set vegetables, chicken and caramelized onions. Cover with cheese and oven bake for about 20 minutes.
