4 minced chicken breast without skin
1 package of 250 gr (3 cups) of les Cultures e chez nous sliced leeks
10 ml (2 teaspoons) of curry
250 ml (1 cup) of quinoa
500 ml (2 cups) of chicken broth
30 ml (2 tablespoons) of olive oil
Optional:
2 diced tomatoes

Preparation
In a casserole heat oil at medium heat. Cook chicken 1 to 2 minutes each side. Transfer chicken in a plate.
In the same casserole, cook leeks for 2 to 3 minutes.
Add curry, quinoa, broth, chicken and if desired, diced tomatoes. Salt, pepper and stir. Bring to a boil.
Cover and cook at medium low heat for 18 to 20 minutes.
