Ingredients

  • 4 minced chicken breast without skin
  • 1 package of 250 gr (3 cups) of les Cultures e chez nous sliced leeks
  • 10 ml (2 teaspoons) of curry
  • 250 ml (1 cup) of quinoa
  • 500 ml (2 cups) of chicken broth
  • 30 ml (2 tablespoons) of olive oil
  • Optional:
  • 2 diced tomatoes

Preparation

  • In a casserole heat oil at medium heat. Cook chicken 1 to 2 minutes each side. Transfer chicken in a plate.
  • In the same casserole, cook leeks for 2 to 3 minutes.
  • Add curry, quinoa, broth, chicken and if desired, diced tomatoes. Salt, pepper and stir. Bring to boil.
  • Cover and cook at medium low heat for 18 to 20 minutes.
