Ingredients

  • For the sponge cake :
  • 250 ml (1 cup) of flour
  • 5 ml (1 teaspoon) of baking powder
  • 3 eggs
  • 250 ml (1 cup) of sugar
  • 45 ml (3 tablespoons) of cold water
  • For the garnishing :
  • 180 ml (¾ cup) of 35% whipping cream
  • 750 ml (3 cups) of fruits of your choice
  • 125 ml (½ cup) of apricots jelly or melted gooseberries

Preparation

  • Preheat oven at 205 C (400 F).
  • In a bowl, mix flour with baking powder.
  • With an electric mixer, whisk eggs until it whitens. Gradually add sugar, then water.
  • Carefully add dry ingredients to liquid ingredients.
  • Butter and flour a flan mold of 30 cm (12 inches) of diameter. Pour batter into the mold.
  • Oven bake 12 minutes. Remove from oven and unmold. Cool down entirely before garnishing.
  • With an electric mixer, whip the cream.
  • Set fruits over cooled cake. Coat with melted jelly and garnish with whipped cream.
