Leeks, apples and Camembert puff pie

  • One package of 200 gr (6½ oz) of puff pastry
  • 1 package of 250 gr (3 cups) of Les Cultures de chez nous sliced leeks
  • 15 ml (1 tablespoon) of olive oil
  • 125 gr (4 oz) of minced Camembert cheese
  • 2 apples or pears, heart removed and sliced into quarters
  • 30 ml (2 tablespoons) of butter
  • 15 ml (1 tablespoon) of honey
  • 30 ml (2 tablespoons) of pine nuts
  • Salt and pepper

  • Cover a baking sheet with parchment paper. Lower puff pastry dough into a circle of 25 cm (10 inches) of diameter. Set over the plate by folding the side over. Refrigerate 30 minutes.
  • Cook sliced leeks in a pan until tenderness, for about 5 minutes.
  • Set the grill at the bottom of the oven. Preheat oven at 375 °F (190 ºC). Prick bottom of the crust with a fork. Do not prick its sides. Brush with olive oil. Spread cheese into a star shape. Add apple or pear slices into remaining spaces.
  • Add sliced leeks, honey over the pie and spread with pine nuts. Generously salt and pepper.
  • Oven bake 40 minutes. Serve as an appetizer.
