Ingredients

  • 4 radish
  • 8 strawberries
  • 250 ml (1 cup) of mesclun
  • 500 ml (2 cups) of Lamb's lettuce
  • 250 ml (1 cup) of blueberries
  • 150 g of crumbled feta
  • 125 ml (½ cup) of sliced roasted honey almonds (such as Almond accents Wonderful)
  • For the vinaigrette :
  • 80 ml (1/3 cup) of olive oil
  • 30 ml (2 tablespoons) of cider vinegar
  • 45 ml (3 tablespoons) of chopped chive
  • 30 ml (2 tablespoons) of chopped parsley
  • 5 ml (1 teaspoon) of chopped garlic
  • Salt and pepper up to taste

Preparation

  • In a large salad bowl, mix ingredients for the vinaigrette.
  • With a peeler, finely mince radish. Slice strawberries into quarters.
  • In the salad bowl, add mesclun, Lamb's lettuce, radish and fruits. Stir.
  • Divide into plates. Garnish with feta and sliced almonds.
