  • 2 liters (8 cups) of diced pumpkin
  • 30 ml (2 tablespoons) of butter or margarine
  • 1/2 package of 250 g (1 1/2 cup) of Les Cultures de chez nous sliced leeks
  • 3 diced potatoes
  • 1,5 liter (6 cups) of chicken broth
  • Salt and pepper up to taste
  • 375 ml (1 1/2 cup) of milk or cooking cream
  • Nutmeg up to taste

  • In a casserole, melt butter or margarine. Fry sliced leeks and pumpkin. Add potatoes and broth. Salt and pepper. Cover and simmer 40 minutes.
  • Set in a mixer then set back in the casserole. Bring to a boil then add cream or milk and nutmeg. DO NOT KEEP BOILING.
  • Serve with roasted croutons.
