Choco-strawberries mousses

  • 250 g of dark chocolate 70 %
  • 6 egg yolks
  • 60 ml (¼ cup) of sugar
  • 375 ml (1 ½ cup) of 35% whipping cream
  • 375 ml (1 ½ cup) of diced strawberries
  • 30 ml (2 tablespoons) of honey

  • With a bain-marie, melt chocolate. Remove from heat and cool down.
  • In a bowl, whisk egg yolks with sugar until the mix whitens.
  • Gradually add melted chocolate to the mix of egg yolks.
  • With an electric mixer, whip cream at high speed until obtaining firm spikes.
  • Add whipped cream to the previous mix by carefully folding the preparation with a spatula.
  • Add 250 ml (1 cup) of diced strawberries by carefully stirring.
  • Divide the mousse into four desserts cups.
  • Refrigerate for 2 to 3 hours.
  • In an hermetical container, mix remaining strawberries with honey. Set aside at fresh.
  • When serving, garnish each mousses with strawberries salsa.
