Leeks with Oka cheese croutons

  • 30 ml (2 tablespoons) of butter
  • 1 package of 250 g (3 cups) of Les Cultures de chez nous sliced leeks
  • 160 ml (2/3 cup) of cooking cream
  • Salt up to taste
  • 12 thin slices of buttered baguette bread
  • 12 thin slices of Oka cheese, slightly thinner than baguette slices
  • Crushed pepper up to taste

  • Preheat oven at 375°F (190°C).
  • Heat butter in a large nonadhesive pan at medium heat. Cook in it Les Cultures de chez nous sliced leeks for 6 to 7 minutes while stirring.
  • Reduce heat at medium-low and cook until leek has returned its water. Stir from time to time. Do not brown. Add cream and reduce until it thicker. Salt.
  • Meanwhile, broill bread slices in the oven on a baking sheet. Then divide leeks preparation over grilled breads. Add a cheese slice. Spread lightly with crushed pepper.
  • Oven bake 15 minutes or until cheese lightly gratin.
