  • 1 big potato
  • 1 medium onion
  • 2 Cortland apples
  • 20 ml (4 teaspoons) of olive oil
  • 1 package of 250 g (3 cups) of Les Cultures de chez nous sliced leeks
  • 1,25 L (5 cups) of chicken broth without added salt
  • 1 Bay leaf
  • 1 thyme stem
  • Salt and peper up to taste

  • Peel and dice potato and apples. Chop onion.
  • In a casserole, heat oil at medium heat. Cook onion, potato, apples and sliced leeks 5 minutes, without browning.
  • Add broth, Bay leaf and thyme stem. Bring to a boil. Cover and let simmer 35 minutes, until vegetabes tenders.
  • Remove Bay leaf and thyme stem. With a mixer, reduce the preparation into a smooth cream.
