  • 454 g (1 pound) of fresh slamon, whitout its skin
  • 1/2 package of 250 g (1 1/2 cup) of Les Cultures de chez nous sliced leeks
  • 1 whisked egg yolk
  • Salt and pepper, up to taste
  • Some drops of green tabasco
  • 45 ml (3 tablespoons) of oil
  • 4 little breads of whole grain with sesame seeds

  • Preheat oven at 325°F (160°C).
  • Chop salmon with a knife to make it tartare like. In a bowl, mix slamon flesh with leek, egg yolk, salt, pepper, and tabasco. Make 4 round patties.
  • In a pan, heat oil at medium heat and brown patties on each sides for 5 to 6 minutes. Set aside in the oven to keep warm.
  • Broil breads, then garnish with 1 salmon patty.

Chef's notes

Try to variate garnishings for more fun! Caper, roasted onions, wasabi mayonnaise, minced with cream iceberg lettuce, cucumber, sour ream, tomatoes and olives salsa, etc. If you want to obtain more crispy patties, coat with flour or with breadcrumbs before baking.
