Ingredients

  • 160 ml (2/3 cup) of cooking cream
  • 3 eggs
  • Salt and pepper up to taste
  • Dough pastry, homemade or commercial for a mold of 23 cm (9 inches) of diameter
  • 300 gr (10 oz) of trimmed fresh asparagus sliced in three
  • 125 gr (4 oz) of grated Havarti herbs cheese

Preparation

  • In a bowl, mix cream, eggs, salt and pepper.
  • On a lightly floured surface, low down pastry in a circle of about 25 cm (10 inches) of diameter. Carefully press dough at the bottom and sides of a pie mold of 23 cm (9 inches) of diameter. Flute borders. Brush crust with 15 ml (1 tablespoon) of eggs mixture. Add asparagus, cheese and eggs mixture left.
  • Oven bake at the bottom of the oven at 400 °F (200°C) for about 25 minutes or until a knife set a the center of the quiches gets out clean. Cool down for about 5 minutes before serving.
